New year, new ice cream sandwiches

Happy new year everyone! Hope you all had an excellent night and woke up feeling fresh and rejuvenated this morning. I woke up with a bug but I'm hoping it's just the 24 hour kind. Thank goodness I took pictures of these ice cream sandwiches yesterday. I spread dark chocolate on the inside of soft oatmeal cookies and then filled them with strawberry ice cream. I had a bit of a disagreement with my freezer which it turns out is temperamental but in the end I got them to turn out and I was very excited to be able to eat an ice cream sandwich again after so many years. Here's to a new year full of new (and delicious) things.
